Recipe: Crunchy Flourless Pear Crumble

Flourless crunchy pear crumble

The most awesome part about our Kelly Bros produce box road test to date? Reworking old favourite recipes to fit the ingredients in front of you. Our latest creation, is this absolutely delicious crunchy flourless pear crumble. It uses only four ingredients, takes less than 10 minutes to prepare and is guaranteed to be popular with anyone and everyone lucky enough to get a portion. Read on for the recipe and notes on how to substitute ingredients for what’s in your box or pantry.

Serves 8.

4 – 6 x pears (It doesn’t matter how ripe or beaten up they are! Apples are also a great option.)
2 cups oats (Feeling creative? Try quinoa flakes instead.)
100g butter at room temperature (Coconut oil/butter works really well too.)
1 cup brown sugar (Coconut or palm sugar is also very effective.)

Preheat oven to 180 C (350 F).

Wash and thinly slice the pears. This can be done by hand, but we use and love our 4200XL Magimix ($659.00 AUD). Throw the slices into a baking dish to cover the base. Any shape dish will do, but we used one that is about 30cm long by 12cm wide and 5cm deep.

Cut the butter into cubes. Add the oats, butter and sugar to a bowl. Rub together with clean fingers until well combined. Top the sliced pears with the oat mixture ensuring the pears are completely covered.

Bake for 30 minutes or until golden brown. Serve with ice cream or thickened cream.

For a juicier crumble, add a cup of berries along with the pears (or just top the crumble with them in place of the cream / ice cream). If you don’t have apples, pears or anything of the kind the entire dish can be made just with mixed berries. Just remember, the juicier the fruit, the wetter the resulting dish will be.
